Cheesy Courgette Slice (MC)

Ingredients

  • ½ courgette, cut into 16 thin slices

  • 30g cheese, grated

  • Pinch of black pepper, to taste

  • ¼ tsp mixed herbs

  • 1 tsp olive oil

  • 1 egg

  • 2 tbsp hummus

  • 1 large tomato, sliced

Instructions

  1. Preheat the oven to 180°C (160°C fan) or Gas Mark 4. Line a baking tray with baking paper.

  2. Arrange the courgette slices on the tray in a rectangular shape, overlapping them slightly to help them stick together and form a solid base.

  3. Sprinkle the grated cheese evenly over the courgette base. Season with black pepper and mixed herbs.

  4. Bake for around 25 minutes, until the cheese is melted and the courgette has softened and lightly browned. Remove from the oven and allow to cool for 5–10 minutes, or until the base has firmed up enough to handle.

  5. Heat the olive oil in a frying pan and fry the egg to your liking.

  6. Once the courgette has cooled, spread the hummus over the top, layer the tomato and top with a fried egg.

  7. Serve immediately.

    Note - If you want to make this recipe low carb, replace the hummus with 1 tsp mayonnaise or 1 tbsp tzatziki or coleslaw.
