Savoury Breakfast Bowl

Ingredients

  • 2 eggs

  • ½ tsp olive oil

  • 2 sausages (pork, beef, chicken/turkey or veggie)

  • 2 tomatoes, quartered

  • ½ avocado, sliced

  • 1 heaped tbsp sauerkraut

  • Pinch of black pepper, for seasoning

  • Pinch of chilli flakes or chopped fresh herbs (parsley or chives), to serve (optional)

Instructions

  1. Bring a small saucepan of water to the boil. Carefully add the eggs and boil for 6½ minutes for soft-boiled yolks (or to your liking). Once cooked, transfer to a bowl of cold water to stop the cooking.

  2. While the eggs are boiling, heat the olive oil in a frying pan over medium heat and cook the sausages for about 8–10 minutes, until browned and cooked through, turning occasionally. Alternatively, cook the sausages in the oven or air fryer (adjust timing as necessary) until browned and cooked through.

  3. If you prefer warm tomatoes, add them to the pan (oven or airfryer) for 1–2 minutes to soften slightly, or leave them raw.

  4. Once the sausages are cooked, set aside to cool slightly and slice.

  5. Peel the boiled eggs gently and slice them in half.

  6. Assemble the bowl by arranging the sausages, tomatoes, avocado slices and sauerkraut.

  7. Add the eggs on top and season everything with black pepper and a sprinkle of chilli flakes or chopped fresh herbs, if using.
