Purple Porridge

Ingredients

  • 40g porridge oats
  • 1 tbsp ground flaxseed
  • 135ml milk (of your choice)
  • 70g blueberries, fresh or frozen
  • 1 tsp honey (or maple syrup)

Instructions

  1. In a small saucepan, combine the oats, ground flaxseed, and milk.

  2. Place over medium heat and cook, stirring occasionally, until the oats start to thicken (about 3–5 minutes).

  3. Add the blueberries (reserve a few for topping) and continue to cook for 2–3 minutes until heated through.

  4. Remove from the heat and stir in the honey or maple syrup.

  5. Pour into a bowl, top with the remaining blueberries and enjoy.
