Peach Melba Cheesecake Overnight Weetabix

Ingredients

  • 2 Weetabix
  • 50ml milk (of your choice)
  • 200g full-fat Greek yoghurt
  • 2 tsp cream cheese (optional)
  • ½ tsp vanilla essence
  • 15 fresh raspberries
  • 1 tsp honey
  • 1 peach, sliced
  • 1 tsp flaked almonds (optional)

Instructions

  1. Crush the Weetabix into a small container or bowl. Pour over the milk and mix well. Use the back of a spoon to press the mixture down firmly into a flat, compact base.

  2. In a small bowl, combine the Greek yoghurt, cream cheese and vanilla essence until smooth.

  3. Spread this mixture evenly over the Weetabix base and smooth the top.

  4. Lightly mash the raspberries in a small bowl, add the honey and stir together. Spoon the raspberry mixture over the yoghurt layer.

  5. Place in the fridge overnight. In the morning, add a layer of fresh peach slices over the compote. Sprinkle over the flaked almonds, if using, just before serving.

Note - Best assembled the night before and enjoyed within 24 hours for the best texture. Can be stored in the fridge for up to 2 days.
