Creamy Cottage & Egg Toast

Ingredients

  • 1 slice wholemeal bread (or sourdough)
  • 1 or 2 poached eggs
  • 1 tsp butter (optional)
  • 2 tbsp cottage cheese
  • 1 large tomato, sliced
  • Salt and black pepper, to taste
  • ½ tsp Italian herbs

Instructions

  1. Toast the wholemeal bread or sourdough to your liking and prepare the poached eggs.

  2. Once toasted, lightly butter the bread if desired, then spread over the cottage cheese. Top with the tomato slices and poached egg(s).

  3. Slice the poached egg(s) down the middle, then season with salt, black pepper and Italian herbs.

  4. Serve immediately.
