Open-Faced Egg, Tomato and Salad Sandwich (MC)
Ingredients
- 1 slice of brown wholemeal bread
- 2 eggs
- 1 tsp full-fat mayonnaise (or salad cream)
- A handful of mixed salad leaves
- 1 tomato, sliced
- Sprinkle of black pepper to taste
Instructions:
- Toast the bread to your liking. 
- Fry the eggs in a dry frying pan to your liking. 
- To serve, spread the mayonnaise (or salad cream) on the toast and top with the salad leaves, eggs and tomato. Sprinkle with black pepper and enjoy!
