One-Pan Brunch Skillet (LC)
Ingredients
1 tsp olive oil
½ onion, diced
½ pepper (any colour), diced
½ courgette, grated
2 large tomatoes, diced
Pinch of black pepper, to taste
½ tsp smoked paprika
2 eggs
30g feta, crumbled
1 tsp fresh parsley, chopped (optional)
Instructions
Heat the olive oil in a medium non-stick frying pan over medium heat.
Add the diced onion and pepper. Sauté for 5–6 minutes until softened and just starting to caramelise.
Stir in the grated courgette and diced tomatoes. Cook for another 4–5 minutes until the veg softens and the tomatoes start to release their juices.
Season with black pepper and smoked paprika. Stir well and let the mixture simmer gently for 2–3 minutes to allow the flavours to combine.
Create two small wells in the veg mixture and crack an egg into each one. Cover the pan with a lid or foil and cook for 3–4 minutes, or until the egg whites are set and the yolks are still slightly runny (or cook longer if you prefer firmer yolks).
Remove from heat, sprinkle over the crumbled feta and chopped parsley, and serve immediately.
