No-Fuss Falafel Bowl (HC)
Ingredients
- 4-5 falafels
- ¼ large or ½ small avocado
- Handful of rocket (any salad leaves)
- ¼ cucumber, sliced
- 1 tbsp pickled red onions
- 3-4 slices of roasted peppers
- 1 heaped tbsp potato salad
- 30g feta, crumbled
Instructions
Heat the falafels according to packet instructions.
To serve, add the avocado, rocket, cucumber, pickled red onions, roasted red peppers and potato salad.
Sprinkle over the feta and enjoy immediately
Note: This bowl is easy to customise — swap the veggies or sides for whatever you prefer or have available.
