Mince Pie Overnight Oats

Ingredients

  • 250ml semi-skimmed milk (or preferred choice)
  • 2 tsp honey
  • 80g porridge oats
  • 2 tbsp chia seeds
  • 30g cranberries
  • 30g sultanas
  • Juice and zest from 1 orange
  • 1 tsp cinnamon
  • 2 tbsp full-fat Greek yoghurt

To serve (per portion):

  • Portion of fruit of your choice (e.g., a handful of berries, 1 banana etc.)
  • 15g nuts (of your choice: pecans, walnuts), chopped

Instructions

  1. In a mixing bowl, combine all the ingredients until well mixed.

  2. Divide the mixture between two jars or containers.

  3. Cover and refrigerate overnight.

  4. When ready to serve, top with your chosen fruit and a sprinkle of chopped nuts.

  5. Enjoy!

Note - This recipe makes two portions. Store in the fridge for 2-3 days. Can also be served warm by either heating in a saucepan or microwave.
