Mexican Eggs

Ingredients

  • 1 tsp olive oil
  • 2 eggs
  • 3 tbsp black beans, drained
  • ½ lime, juiced
  • ¼ tsp red chilli flakes
  • 10g full-fat Greek yoghurt
  • ½ tomato, diced
  • ½ tbsp fresh coriander, chopped
  • ¼ green chilli, deseeded and sliced
  • ¼ avocado, peeled and sliced
  • 1 lime wedge, to serve

Instructions:

  1. Heat a frying pan to a medium heat and add olive oil.

  2. Crack eggs into the pan and fry for 3-4 minutes until cooked.

  3. Whilst the eggs cook, mash together the beans, lime juice and red chilli flakes.

  4. Add the beans to a serving plate then top with the fried eggs.

  5. Top with a spoonful of yoghurt, diced tomato, coriander and green chilli for an authentic Mexican taste.

  6. Serve with avocado slices and a wedge of lime on the side.

Top Tip

Best to make fresh each day.
