Mexican Eggs
Ingredients
- 1 tsp olive oil
- 2 eggs
- 3 tbsp black beans, drained
- ½ lime, juiced
- ¼ tsp red chilli flakes
- 10g full-fat Greek yoghurt
- ½ tomato, diced
- ½ tbsp fresh coriander, chopped
- ¼ green chilli, deseeded and sliced
- ¼ avocado, peeled and sliced
- 1 lime wedge, to serve
Instructions:
Heat a frying pan to a medium heat and add olive oil.
Crack eggs into the pan and fry for 3-4 minutes until cooked.
Whilst the eggs cook, mash together the beans, lime juice and red chilli flakes.
Add the beans to a serving plate then top with the fried eggs.
Top with a spoonful of yoghurt, diced tomato, coriander and green chilli for an authentic Mexican taste.
Serve with avocado slices and a wedge of lime on the side.
