Meal Prep Tuna Salad (LC)

Ingredients

  • 2 tins of tuna, in water or brine, drained (approx. 290g)
  • 2-3 spring onions, sliced
  • 10 cherry tomatoes, quartered
  • 1 red pepper, diced
  • 2-3 tbsp tinned sweetcorn
  • 2 tbsp Greek yoghurt
  • 1 tsp paprika powder
  • Black pepper, to taste
  • Squeeze of lemon juice (optional)
  • A large handful of mixed salad leaves (per portion)

Instructions

  1. Add the tuna, spring onions, cherry tomatoes, red pepper and sweetcorn to a large bowl.

  2. Add the Greek yoghurt, mayonnaise, paprika, black pepper, and lemon juice (if using).

  3. Stir everything together until well combined.

  4. Serve with a large handful of mixed salad leaves.

Note - This recipe makes 3-4 portions. Store in the fridge and enjoy for lunch over the next 2-3 days.
