Meal Prep Tuna Salad (LC)
Ingredients
- 2 tins of tuna, in water or brine, drained (approx. 290g)
- 2-3 spring onions, sliced
- 10 cherry tomatoes, quartered
- 1 red pepper, diced
- 2-3 tbsp tinned sweetcorn
- 2 tbsp Greek yoghurt
- 1 tsp paprika powder
- Black pepper, to taste
- Squeeze of lemon juice (optional)
- A large handful of mixed salad leaves (per portion)
Instructions
Add the tuna, spring onions, cherry tomatoes, red pepper and sweetcorn to a large bowl.
Add the Greek yoghurt, mayonnaise, paprika, black pepper, and lemon juice (if using).
Stir everything together until well combined.
Serve with a large handful of mixed salad leaves.
Note - This recipe makes 3-4 portions. Store in the fridge and enjoy for lunch over the next 2-3 days.
