Meal Prep Broccoli +Chicken Box

Ingredients

  • 2 heaped tbsp full-fat Greek yoghurt
  • 1 heaped tbsp mayonnaise
  • ½ tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 tbsp extra virgin olive oil
  • 1 broccoli head, cut into very small florets
  • ½ large red onion (1 small), chopped
  • Approx 200g roast/cooked chicken, shredded or diced
  • 60g cranberries
  • 60g flaked almonds

Instructions

  1. In a small bowl, mix together the Greek yoghurt, mayonnaise, Dijon mustard, lemon juice, honey and olive oil until smooth and well combined. Taste test and add more flavour if needed.

  2. Add the broccoli, red onion and chicken and mix thoroughly so everything is evenly coated.

  3. Divide between two meal prep containers or bowls. Finish by sprinkling over the cranberries and flaked almonds.

Note - This recipe serves 2. Store in the fridge for 3-4 days. You can add extra salad leaves or vegetables if you wish.
