Healthy Fry Up Dinner (LC)

Ingredients

  • 2 sausages (pork, chicken/turkey or vegetarian)
  • 1 tsp olive oil
  • 6 mushrooms, quartered
  • ¼ courgette, sliced into rounds
  • Pinch of black pepper, to taste
  • ½ tsp fresh or dried herbs (parsley, chives, or basil)
  • Pinch of chilli flakes (optional)
  • Bowl of fresh spinach
  • 1 large tomato, halved
  • 2 eggs
  • 1 tsp reduced-sugar ketchup or brown sauce

Instructions

  1. Cook the sausages according to pack instructions, either by grilling, air frying, or baking, until fully cooked through and golden.

  2. In a small frying pan, heat the olive oil over medium heat. Add the mushrooms, courgettes, black pepper, herbs and chilli flakes if using. Cook for 4-5 minutes, stirring occasionally, until softened and lightly browned.

  3. Stir in the spinach and cook for an additional 2–3 minutes, until the spinach is wilted.

  4. Move everything to the side of the pan and add the tomato halves, cut side down, and cook for another 2–3 minutes until lightly caramelised. Remove from the pan and keep warm.

  5. In the same pan, crack in the eggs and fry to your liking.

  6. Plate everything up and enjoy with your choice of sauce!
