Green Tuna Goddess Bowl (LC)
Ingredients
- 70g or 1 small tinned tuna, drained
- 1 small red onion, finely diced
- Sprinkle of black pepper (optional)
- 6 cherry tomatoes, sliced
- ½ cucumber, sliced
- ½ red pepper, sliced
- 1 small carrot, grated
- Handful of fresh spinach
Sauce
- ½ large avocado
- Handful of parsley
- 1 tsp mayonnaise
- 1 tbsp full-fat Greek yoghurt
- 1 tbsp lemon juice
- Salt and black pepper to taste
- Pinch of dried garlic
- Pinch of dried onion powder
- ½ tsp Italian herbs
- 4 tbsp water
Instructions:
To make the sauce, add the sauce ingredients into a blender and blitz until smooth.
In a bowl, mix the drained tuna with the red onion. Season the tuna with black pepper if desired.
Add the tomatoes, cucumber, red pepper, carrot and spinach to a bowl.
Add the tuna mixture, drizzle over the sauce and enjoy.
