Full English Shakshuka
Ingredients
- 1 tsp olive oil
- 2 sausages (chicken, pork, turkey or vegetarian)
- 2 bacon slices
- 5 mushrooms, sliced
- 6 cherry tomatoes, halved
- ½ tin chopped tomatoes
- Pinch of black pepper
- ½ tsp dried parsley
- 2 eggs
Instructions
Heat ½ tsp olive oil in a frying pan over medium heat and cook the sausages for about 8–10 minutes, until browned and cooked through, turning occasionally. Alternatively, cook the sausages in the oven or air fryer (adjust timing as necessary) until browned and cooked through (no need to use olive oil when cooking in the oven or air fryer).
Once cooked, chop into bite-sized pieces and set aside to keep warm.
Cook the bacon to your liking, then chop it into bite-sized pieces. Set aside to keep warm.
Wipe the frying pan with a piece of kitchen roll and heat the remaining olive oil over a medium heat. Add the mushrooms and cherry tomatoes and cook for 3–4 minutes until softened.
Add the chopped tomatoes, black pepper and parsley. Stir to combine and simmer gently for about 5 minutes.
Return the sausage slices and bacon to the pan and mix them into the tomato sauce.
Make two small wells and crack an egg into each.
Cover with a lid and cook on a low heat for 3–5 minutes, until the whites are set but the yolks remain soft.
Serve immediately.
