French Toast + Berries

Ingredients

  • 1 egg
  • 2 tbsp milk (of your choice)
  • 1 tsp maple syrup (or honey)
  • ½ tsp cinnamon
  • ¼ tsp vanilla extract
  • 1 tsp butter
  • 1 slice wholemeal bread
  • A handful of fresh berries (approx.15: strawberries, raspberries and blueberries)
  • 1 tbsp full-fat Greek yoghurt

Instructions

  1. In a shallow bowl, whisk together the egg, milk, ½ tsp maple syrup, cinnamon, and vanilla extract.

  2. Heat the butter in a frying pan over medium heat.

  3. While the butter melts, dunk the slice of bread gently in the egg mixture, coating both sides, but do not soak for more than 10–15 seconds.

  4. Place the coated bread in the frying pan and cook until golden brown on each side.

  5. Remove from the pan and place on a plate.

  6. Top with fresh berries, a dollop of Greek yoghurt, and drizzle the remaining ½ tsp maple syrup over the top.

  7. Serve immediately and enjoy!
