Falafel, Beetroot & Tzatziki Flatbread

Ingredients

  • 1 flatbread
  • 4 falafel
  • 1-2 tbsp tzatziki
  • ½ small red onion, sliced
  • A handful of rocket
  • 1 or 2 pickled beetroot, sliced
  • 30g feta, crumbled
  • Black pepper, for seasoning
  • ½ tsp Italian herbs
  • 1 tbsp pine nuts (optional)
  • Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)

Instructions

  1. Heat the flatbread and falafel according to the packet instructions.

  2. Spread the tzatziki evenly over the flatbread.

  3. Top with the falafel, red onion, rocket, sliced beetroot and crumbled feta.

  4. Season with black pepper and sprinkle with Italian herbs.

  5. Scatter pine nuts on top, if using.

  6. Serve with the mixed salad on the side.

Note - This recipe is flexible – add whatever vegetables or salad you have on hand.
