Easy Tuna Mornay (LC)
Ingredients
- 1 tsp olive oil
- 6 mushrooms, sliced
- 1 spring onion, finely chopped
- ½ tsp dried parsley
- ½ tsp paprika
- Black pepper, to taste
- 1 tbsp tomato puree
- 1 tbsp full-fat creme fraiche
- 1 tin of tuna, in water or brine, drained (approx. 70g)
- 3 tbsp sweetcorn (fresh or frozen)
- 1-2 tbsp water
- 30g cheese, grated
Instructions
Preheat the oven to 200°C (fan 180°C) or air fryer to 180°C.
Heat the olive oil in a frying pan over medium heat. Add the mushrooms and spring onion and cook for 3–4 minutes until softened.
Add the dried parsley, paprika, black pepper, tomato puree, creme fraiche, tuna, sweetcorn and water. Stir gently until combined and the sauce starts to thicken slightly.
Transfer to a small ovenproof casserole dish and sprinkle the grated cheese evenly on top.
Pop in the oven for 8–10 minutes or air fryer for 4-5 minutes, until the cheese is golden and bubbling.
Allow to cool slightly and serve.
