Dippy Eggs + Toast

Ingredients

  • 2 eggs
  • 1 slice of brown wholemeal bread
  • 1 tsp unsalted butter
  • Pinch of black pepper
  • Portion of fruit or vegetables (of your choice: berries, banana, tomatoes, avocado etc.)

Instructions

  1. Bring a small saucepan of water to a gentle boil. Carefully add the eggs and cook for 4–6 minutes for soft-boiled eggs (adjust timing for your preferred yolk consistency).

  2. While the eggs are cooking, toast the bread and spread it with butter.

  3. Place the cooked eggs in egg cups, crack open and sprinkle with a pinch of black pepper.

  4. Serve with the toast for dipping and your chosen fruit or vegetables on the side.
