Creamy Chicken & Veggie Skillet (LC)

Ingredients

  • 1 tsp olive oil

  • 4 mushrooms, halved

  • ½ red pepper, finely sliced

  • ½ courgette, finely sliced

  • Pinch of black pepper, to taste

  • ¼ tsp garlic powder

  • ½ tsp Italian seasoning

  • Pinch of chilli flakes (optional)

  • 100g cooked/roasted chicken, diced or shredded

  • 1 tbsp full-fat crème fraiche

  • 1 tsp fresh parsley, chopped (optional)

Instructions

  1. Heat the olive oil in a non-stick frying pan over medium heat.

  2. Add the mushrooms, red pepper, and courgette. Season with black pepper, garlic powder, Italian seasoning, and chilli flakes (if using). Cook for 4–5 minutes until the vegetables are tender.

  3. Add the chicken to the pan and stir to combine.

  4. Stir in the crème fraiche and cook for another 1–2 minutes, until heated through and creamy. Add a splash of boiling water to loosen the sauce if you prefer a thinner consistency.

  5. Sprinkle over the chopped parsley (if using) and serve.
