Creamy Chicken & Veggie Skillet (LC)
Ingredients
- 1 tsp olive oil
- 4 mushrooms, halved
- ½ red pepper, finely sliced
- ½ courgette, finely sliced
- Pinch of black pepper, to taste
- ¼ tsp garlic powder
- ½ tsp Italian seasoning
- Pinch of chilli flakes (optional)
- 100g cooked/roasted chicken, diced or shredded
- 1 tbsp full-fat crème fraiche
- 1 tsp fresh parsley, chopped (optional)
Instructions
- Heat the olive oil in a non-stick frying pan over medium heat. 
- Add the mushrooms, red pepper, and courgette. Season with black pepper, garlic powder, Italian seasoning, and chilli flakes (if using). Cook for 4–5 minutes until the vegetables are tender. 
- Add the chicken to the pan and stir to combine. 
- Stir in the crème fraiche and cook for another 1–2 minutes, until heated through and creamy. Add a splash of boiling water to loosen the sauce if you prefer a thinner consistency. 
- Sprinkle over the chopped parsley (if using) and serve.
