Coronation Chicken Pasta Salad (HC)
Ingredients
- 60g wholewheat pasta
- 1 heaped tsp mayonnaise
- 1 heaped tbsp full-fat Greek yoghurt
- 1 tbsp mango chutney
- ½ tsp curry powder (add more if desired)
- Black pepper, for seasoning
- 1 tbsp soy sauce
- 100 - 130g cooked chicken breast, sliced
- Portion of mixed salad or vegetables, to serve
- 1 tsp fresh parsley, chopped
Instructions
Cook the pasta according to the packet instructions. Once cooked, drain and rinse with cold water to cool completely.
In a large bowl, mix the mayonnaise, Greek yoghurt, mango chutney, curry powder, black pepper, soy sauce, and a small splash of water to loosen the dressing. Taste and adjust seasoning if needed.
Add the cooled pasta and sliced chicken to the bowl.
Gently toss everything together until well coated in the dressing.
Serve with your choice of mixed salad or vegetables and top with a sprinkle of fresh parsley.
Note - Tastes better when it has a little time in the fridge, if you can prepare ahead and leave in the fridge for at least an hour.
Batch Cooking Tip: This recipe is ideal for batch cooking! To make multiple servings, increase the pasta and chicken, based on the number of portions you need.
For the dressing ingredients start with 1.5x when doubling and adjust to taste -it’s easier to add than remove. Store leftovers in an airtight container in the fridge for up to 3 days.
