Coronation Chicken Bowls (LC)
Ingredients
- 1 heaped tsp mayonnaise
- 1 heaped tbsp full-fat Greek yoghurt
- 1 heaped tbsp mango chutney
- ½ tsp curry powder
- Black pepper for seasoning
- 1 tsp soy sauce
- Approx. 100g cooked chicken, shredded or chopped
- ½ yellow pepper, finely diced
- ½ spring onion, finely chopped
- 1 tsp sultanas
- Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)
- 15g flaked almonds
Instructions:
In a bowl, combine the mayonnaise, Greek yoghurt, mango chutney, curry powder, black pepper, soy sauce and 1 tsp of cold water.
Add the chicken, yellow pepper, spring onion and sultanas to the bowl, mix around, taste test, and add more seasoning if you like.
Serve on a large side salad, topped with flaked almonds.
Batch Cooking Tip: This recipe is ideal for batch cooking! Simply scale the ingredients based on the number of portions you want to prepare. Store the coronation chicken mixture in an airtight container in the fridge and use within the shelf life of the cooked chicken (check the best before date).
