Christmas Nourish Bowl

Ingredients

  • 2 sausages (pork, beef, chicken/turkey or veggie)
  • 2 slices of bacon
  • 1 tsp olive oil
  • 150g leftover cooked vegetables (Brussel sprouts, carrots, parsnips)
  • 1 tbsp full-fat Greek yoghurt
  • 1 heaped tsp mayonnaise
  • 1 tbsp cranberry sauce
  • A handful of rocket
  • 30 feta cheese, crumbled
  • Black pepper, for seasoning
  • Pinch of mixed herbs

Instructions

  1. Wrap each sausage in a slice of bacon.

  2. Heat the olive oil in a frying pan over medium heat, or preheat your air fryer to 180°C.

  3. Cook the wrapped sausages in the frying pan for 8–10 minutes, turning occasionally until golden and cooked through. If using the airfryer, place the sausages in the basket, drizzle over the oil, and air fry for 10–12 minutes, shaking halfway through.

  4. While the sausages are cooking, gently warm leftover vegetables in the pan, or warm separately if using the air fryer.

  5. Make the cranberry dressing by mixing the Greek yoghurt, mayonnaise and cranberry sauce in a small bowl.

  6. Add the rocket to a plate or bowl. Add the sausages, roasted vegetables and crumble over the feta cheese.

  7. Spoon the cranberry dressing over or on the side. Sprinkle over the black pepper and mixed herbs and serve.

Note - This recipe is flexible. Use whatever vegetables you have or use leftover vegetables and reheat before serving. You could also use regular sausages without the bacon.
