Chocolate Scrambled Oats

Ingredients

  • ½ banana
  • 40g oats/porridge
  • 1 tsp cocoa powder
  • ½ tsp vanilla essence
  • 125g full-fat Greek yoghurt
  • Handful of mixed berries (approx. 15: strawberries, raspberries and blueberries)
  • 1 tsp honey (or maple syrup)

Instructions

  1. In a medium bowl, mash the banana and stir in the oats, cocoa powder, vanilla essence and 1 tablespoon of the Greek yoghurt. Mix well to combine.

  2. Heat a frying pan over medium heat, place the oat mixture in the pan and spread it out in an even layer. Cook for a few minutes or until the mixture begins to brown.

  3. Using a wooden spoon or spatula start breaking up the mixture (like you would when making scrambled egg) and continue to cook until all of the mixture is golden brown. Allow to cool before serving.

  4. Serve warm with the remaining Greek yoghurt, a handful of berries and a drizzle of honey (or maple syrup).
