Chocolate & Raspberry Chia Pudding

Ingredients

  • 125g full-fat Greek yoghurt
  • 1 heaped tbsp chia seeds
  • 1 tsp raw cacao powder (or sugar-free cocoa powder)
  • ¼ tsp vanilla extract
  • 1 tsp honey
  • 75g raspberries

To serve (per portion):

  • 1 tsp desiccated coconut (optional)
  • 1 tbsp no added sugar muesli (or granola) (optional)
  • Portion of fruit of your choice (e.g., a handful of berries, 1 banana etc.) (optional)

Instructions:

  1. Add the Greek yoghurt, chia seeds, raw cacao powder, vanilla extract and ½ tsp honey to a jar or container. Stir well until smooth and fully combined.

  2. Place the raspberries and the remaining ½ tsp honey into a bowl and mash to form a purée.

  3. Add the raspberry purée on top of the chocolate chia mixture. You can mix in or leave as a layer.

  4. Close the jar/container and place it in the fridge overnight.

  5. In the morning, serve with optional toppings desiccated coconut, muesli (or granola) and fruit of your choice.
