Chocolate & Raspberry Chia Pudding
Ingredients
- 125g full-fat Greek yoghurt
- 1 heaped tbsp chia seeds
- 1 tsp raw cacao powder (or sugar-free cocoa powder)
- ¼ tsp vanilla extract
- 1 tsp honey
- 75g raspberries
To serve (per portion):
- 1 tsp desiccated coconut (optional)
- 1 tbsp no added sugar muesli (or granola) (optional)
- Portion of fruit of your choice (e.g., a handful of berries, 1 banana etc.) (optional)
Instructions:
Add the Greek yoghurt, chia seeds, raw cacao powder, vanilla extract and ½ tsp honey to a jar or container. Stir well until smooth and fully combined.
Place the raspberries and the remaining ½ tsp honey into a bowl and mash to form a purée.
Add the raspberry purée on top of the chocolate chia mixture. You can mix in or leave as a layer.
Close the jar/container and place it in the fridge overnight.
In the morning, serve with optional toppings desiccated coconut, muesli (or granola) and fruit of your choice.
