Chicken Caesar Airfryer Gnocchi

Ingredients

  • 125g fresh gnocchi
  • 1 tsp olive oil
  • Black pepper, to taste
  • 100 - 130g cooked/roasted chicken, diced or shredded
  • 2 bacon slices, grilled and diced
  • 6 cherry tomatoes, halved
  • ½ red onion, finely sliced
  • 1 tsp Italian herbs
  • 1 heaped tbsp of real Caesar dressing
  • 1 heaped tbsp Greek yoghurt
  • A large handful of rocket
  • 30g parmesan

Instructions

  1. Preheat the air fryer to 200°C / 392°F.

  2. Toss the gnocchi with the olive oil and a pinch of black pepper. Spread out in a single layer in the air fryer basket and cook for 10–15 minutes, shaking halfway through, until golden and crispy on the outside.

  3. Prepare the salad base. In a large bowl, add the chicken, grilled bacon, cherry tomatoes and red onion. Season with black pepper and Italian herbs.

  4. Add the Caesar dressing and Greek yoghurt to the bowl and toss everything together until evenly coated.

  5. Add the rocket, crispy gnocchi to the bowl and gently toss through.

  6. Taste and add additional seasoning if needed.

  7. Transfer to a bowl, sprinkle with parmesan and serve immediately.

Note - No air fryer? Heat 1 tsp olive oil in a non-stick pan over medium-high heat and cook the gnocchi for 8–10 minutes, turning occasionally, until golden and crispy.

To batch, store the prepped ingredients separately in airtight containers in the fridge for up to 3 days, then cook a fresh portion of gnocchi and toss everything together when ready to eat.
