Chicken + Pesto Chopped Salad (LC)
Ingredients
1 bowl of crisp lettuce leaves (iceberg, baby gem or romaine)
1 spring onion, sliced
1-2 radishes, finely sliced
4 cherry tomatoes, de-seeded and quartered
½ red pepper (or any colour), sliced
100g cooked chicken, diced or shredded
1 heaped tsp pesto
1 heaped tsp mayonnaise
1 tbsp full-fat Greek yoghurt
Pinch of black pepper, to taste
Instructions
On a large chopping board, add the lettuce, spring onion, radish, tomatoes, pepper and chicken on top of each other and spread out. Chop all the ingredients into small pieces and transfer to a bowl.
Add the pesto, mayonnaise, Greek yoghurt and season with black pepper to taste.
Stir well to coat the salad veggies and chicken in the pesto mixture. Serve immediately.
Note - Feel free to add any other salad veg you have in the fridge - chopped cucumber, red onion, celery or even leftover roasted veg can work well too.
