Chicken Fajita Bowl (LC)
Ingredients
- 1 chicken fillet (approx. 120–150 g), sliced
- ½ red onion, sliced
- ½ red pepper, sliced
- 1 tsp olive oil
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ¼ tsp garlic powder
- Black pepper for seasoning
- A handful of mixed salad leaves
- ¼ cucumber, diced
- 1 tomato, diced
- 1 tbsp tzatziki (or 1 tsp mayonnaise)
Instructions
Preheat the oven or air fryer to 180°C (fan).
Toss the chicken, red onion and red pepper with olive oil, paprika, oregano, garlic powder and black pepper.
Roast or air fry for 12–15 minutes, or until the chicken is cooked through and the vegetables are tender.
To serve, arrange the mixed salad leaves in a bowl, add the diced cucumber and tomato, then add the cooked chicken and vegetables.
Finish with a dollop of tzatziki (or mayonnaise).
Note - In a rush? Could use 100g cooked chicken rather than cooking from raw.
