Chicken Caesar Smash Tacos (HC)
Ingredients
- 100g chicken mince (turkey or vegetarian)
- ½ tsp black pepper
- ½ tsp garlic granules
- 2 small wholewheat tortillas
- 1 tsp olive oil
- Handful iceberg lettuce, sliced
- 8 cherry tomatoes, diced
- ½ red onion, finely sliced
- 2 tbsp parmesan flakes
- Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)
Caesar Dressing
- 1 tbsp full-fat Greek yoghurt
- ¼ tsp garlic paste
- ¼ tsp Dijon mustard
- ¼ tsp Worcestershire sauce
- Pinch of black pepper, to taste
Instructions
Mix all the Caesar dressing ingredients in a small bowl. Set aside in the fridge until ready to serve.
In a separate bowl, combine the chicken mince with the black pepper and garlic granules.
Divide the seasoned mince into two equal portions and shape each into a ball.
Place one mince ball in the centre of each tortilla and press down firmly to flatten and evenly spread the meat across the tortilla surface.
Heat the olive oil in a non-stick frying pan over medium heat.
Place the tortillas meat-side down in the pan and cook for 3–4 minutes, until the meat is golden and nearly cooked through.
Flip the tortillas and cook for another 1–2 minutes until the underside is crisp and the meat is cooked through.
Remove from the pan and top each taco with iceberg lettuce, cherry tomatoes, red onion, parmesan flakes, and a generous drizzle of Caesar dressing.
Serve with a large mixed side salad.
Note - In a rush? Use 1 heaped tbsp of shop bought Caesar dressing.
