Cheesy Cod Parcels (LC)
Ingredients
- 1 tbsp creme fraiche
- Pinch of garlic powder
- ½ tsp dried dill (or mixed herbs)
- Black pepper, for seasoning
- 30g cheese, grated
- 1 skinless cod fillet (approx. 185g)
- 150g green veg medley (peas, green beans, cabbage etc.)
- 1 tbsp fresh parsley, chopped (optional)
- 1 lemon wedge (optional)
Instructions
Preheat the oven or air fryer to 180°C and cut a large sheet of foil
Combine the creme fraiche, garlic powder, dill (or mixed herbs), black pepper and grated cheese in a small bowl.
Place the cod fillet on the foil and spread over the creme fraiche mixture. Then fold the foil around everything to create a sealed parcel.
Transfer the foil parcel to the oven (or air fryer) and cook for about 18-20 minutes (15-18 minutes if using the air fryer), or until the cod flakes when pressed with a fork.
Boil or steam in vegetables.
Open the foil carefully, as hot steam will escape.
Finish with fresh parsley and a squeeze of lemon juice if using, and serve alongside the cooked veg.
Note - To make this recipe high carb, you could serve with 160g of baby potatoes.
