Bacon, Eggs + Toast

Ingredients

  • 2 eggs
  • 2 slices bacon (pork, turkey or veggie)
  • 1 tsp olive oil
  • 50g mushrooms, sliced
  • Black pepper for seasoning
  • 8 cherry tomatoes, halved
  • 1 slice sourdough bread (or any bread)

Instructions

  1. Cook the egg(s) to your liking.

  2. Cook the bacon to your liking.

  3. Add the olive oil to a frying pan over a medium heat. Add the mushrooms and cook until golden. Sprinkle over the black pepper.

  4. Add the tomatoes to warm or you could serve them as they are.

  5. Toast the bread to your liking.

  6. To serve, add the toast to a plate, add the mushrooms and tomato, then place the eggs on top. Sprinkle the eggs with a little more black pepper if wanted.

Note - Any style of eggs will work here, fried, scrambled, poached or even an omelette made with the tomato and mushrooms.
