Cheats Tomato Soup (LC)

Ingredients

  • 1 tsp unsalted butter
  • 1/2 onion, peeled and finely chopped
  • 1 tsp plain flour
  • 1/2 stock cube, low sodium, vegetable
  • 100ml boiling water
  • 200g tinned chopped tomatoes
  • 1 tsp tomato puree
  • Black pepper
  • 1 tsp pesto

Instructions:

  1. Melt the butter in a pot, add the onion and cook over a low heat for 10 minutes or until the onion is soft.

  2. Sprinkle the flour over the onion, stir well, then crumble in the stock cube and 100ml of boiling water, tinned tomatoes, tomato puree (tomato paste) and pepper.

  3. Bring to the boil then reduce the heat and simmer for 2-3 minutes, stirring occasionally.

  4. Leave to cool slightly and blend carefully with a stick blender - be extremely careful not to splash yourself with hot soup.

  5. Swirl pesto into soup before serving.

Top Tip

Can serve with a side portion of protein of your choice.
