Blueberry Compote Yoghurt Bowl

Ingredients

  • 300g blueberries (fresh or frozen)
  • 1-2 tbsp honey
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 1 tbsp chia seeds

To serve (per portion):

  • 125g full-fat Greek yoghurt
  • 1 tbsp no added sugar muesli(or granola)
  • Portion of fruit of your choice (e.g., a handful of berries, 1 banana etc.) (optional)

Instructions

  1. Add the blueberries, 1 tbsp honey, lemon juice, and water to a saucepan.

  2. Heat gently over a low–medium heat for 10 minutes, stirring regularly, until the berries break down and the mixture becomes syrupy. Taste test and add a touch more honey or lemon if needed.

  3. Transfer to a bowl or container and allow to cool completely.

  4. Once cooled, stir through the chia seeds and place in the fridge for at least 3 hours, or ideally overnight, to thicken.

  5. To serve, add the Greek yoghurt to a bowl and top with 2 tbsp blueberry compote, muesli, and extra fruit if desired.
