BBQ Bacon + Pineapple Flatbread (HC)
Ingredients
- 1 flatbread
- 1 tbsp passata (or tomato puree)
- ½ tsp Italian seasoning
- Pinch of black pepper
- 2 slices of cooked bacon
- 1-2 pineapple rings (in juice), chopped
- ¼ red onion, finely sliced
- 30g cheese, grated
- 1 tbsp BBQ sauce
- 1 tbsp coleslaw
- Portion of vegetables (your choice: mixed salad, steamed broccoli, peas, carrots, or a frozen veg medley)
Instructions
Preheat your oven to 180°C (fan).
Place the flatbread on a baking sheet. Spread the passata (or tomato puree) evenly over the flatbread and sprinkle with the Italian seasoning and black pepper.
Add the cooked bacon, pineapple and red onion evenly on top.
Sprinkle the grated cheese over the top.
Bake in the oven for about 8 minutes, or until the cheese is melted and golden.
Remove from the oven, drizzle over the BBQ sauce, and serve with coleslaw and vegetables of your choice on the side.
