Baked Leek, Kale+ Feta Eggs

Ingredients

  • 1 tsp olive oil
  • ½ large leek (or 1 smaller), thinly sliced
  • Large bowl of kale, rinsed, dried, stems removed, leaves thinly sliced
  • ½ tsp mixed herbs
  • ½ tsp garlic powder (optional)
  • ½ tsp paprika
  • 2 eggs
  • Pinch of salt
  • Black pepper for seasoning
  • 30g feta cheese, crumbled

Instructions

  1. Heat the olive oil in a large frying pan over medium heat. Add the sliced leek and kale. Sauté gently for 6–8 minutes until soft.

  2. Stir in the mixed herbs, garlic powder (if using) and paprika. Cook for 2-3 minutes.

  3. Make 2 small wells in the mixture and carefully crack an egg into each well. Season with a pinch of salt and pepper. Cover the pan and cook for 5–7 minutes, or until the eggs are done to your liking.

  4. Crumble over the feta, cover briefly to warm the cheese, and serve immediately.
