Bacon and Cheese Egg Muffins

Ingredients

  • 4 eggs
  • Black pepper, to taste
  • ½ tsp paprika
  • 4 slices cooked bacon, chopped
  • 60g cheddar cheese, grated
  • Unsalted butter (a little for greasing)

Instructions

  1. Preheat the oven to 180°C fan.

  2. Beat the eggs in a medium bowl, season with pepper and paprika.

  3. Add the chopped bacon and grated cheese.

  4. Grease a muffin tray with the butter (should make 5 or 6 muffins depending on size of tray) and fill the moulds.

  5. Bake in the oven for 15-20 mins, or until the eggs have set.

Note - Allow the muffins to cool completely before storing in an airtight container in the fridge for up to 3 days. Enjoy cold or reheat in the microwave for 20–30 seconds before serving. Enjoy 2–3 muffins per serving, depending on your appetite and what you're serving them with.
