Avocado + Scrambled Egg on Toast

Ingredients

  • 2 eggs

  • Pinch of black pepper, to taste

  • 1 tsp unsalted butter

  • 1 slice wholemeal bread

  • ½ avocado, mashed or sliced

  • Pinch of chilli flakes (optional)

Instructions

  1. Crack the eggs into a bowl, season with black pepper, and beat lightly.

  2. Heat a non-stick pan over medium heat and add half of the butter.

  3. Pour in the eggs and stir gently until just set and softly scrambled.

  4. Toast the bread and spread with the remaining butter.

  5. Top the toast with the avocado, then pile on the scrambled eggs.

  6. Season with extra black pepper and chilli flakes, if using.

    Note - Works with any kind of eggs (fried, boiled, poached etc.).
