Air Fryer Halloumi+ Roasted Veg

Ingredients

  • ½ red onion, diced
  • ½ red pepper, diced
  • ½ small courgette, finely diced
  • 5-6 cherry tomatoes, halved
  • 1 tsp olive oil
  • ¼ tsp paprika
  • Black pepper, for seasoning
  • 70g halloumi, sliced
  • 2 tsp harissa
  • 1-2 tbsp full-fat Greek yoghurt
  • Squeeze of lime juice
  • Handful of salad leaves

Instructions

  1. Preheat the air fryer to 200°C.

  2. In a bowl, toss the onion, red pepper, courgette and cherry tomatoes with olive oil, paprika, and black pepper.

  3. Place the vegetables in the air fryer basket and cook for 10 minutes.

  4. After 10 minutes, add the halloumi slices and top with 1 tsp of the harissa. Cook for a further 5 minutes, until the halloumi is golden and the veg is tender.

  5. Meanwhile, whisk together the Greek yoghurt, the remaining harissa, and lime juice to make the dressing.

  6. Serve the roasted veg and halloumi over salad leaves and drizzle with the harissa yoghurt.
