Air Fryer Cajun Chicken Burger (HC)
Ingredients
- 1 chicken fillet
- 1 heaped tsp Cajun seasoning
- 30g cheese, grated
- 1 wholewheat or brown burger bun
- 1 tbsp coleslaw
- 1 large tomato, sliced
- 1–2 slices red onion
- Small handful rocket leaves
- Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)
Instructions
Preheat the air fryer to 200°C.
If your chicken fillet is very thick, you can butterfly it. Slice horizontally through the thickest part, stopping just before cutting all the way through, so it opens out evenly.
Add the chicken to a bowl and coat evenly in the Cajun seasoning.
Place the chicken in the air fryer and cook for 12-15 minutes, turning halfway, until cooked through and golden.
Add the grated cheese on top of the chicken for the final 2 to 3 minutes of cooking, allowing it to melt.
Lightly toast the burger bun.
To assemble, place the chicken on the bottom half of the bun, then layer with coleslaw, tomato, red onion and rocket. Top with the other half of the bun and press down gently.
Serve with a large mixed salad on the side.
