Xmas Stir Fry (HC)
Ingredients
- 60 wholemeal noodles or brown rice
- 1 tsp olive oil or sesame oil
- 150g leftover cooked vegetables (Brussel sprouts, carrots, cabbage, broccoli)
- 100-150g cooked Christmas meat (turkey, ham or vegetarian alternative)
- 1 tbsp soy sauce
- 1 tsp rice wine vinegar
- 1 heaped tbsp oyster sauce
- ½ tsp fresh ginger (or powder)
- ½ tsp fresh garlic (or powder)
- Pinch of black pepper
- 1 tsp sesame seeds
- ½ spring onion, chopped
Instructions
Cook the noodles (or rice) according to the packet instructions. Drain and set aside.
Heat the oil in a large non-stick pan or wok over medium-high heat.
Add the vegetables and cook for 2-3 minutes until starting to caramelise
Add the Christmas meat and stir for 2 minutes until heated through.
Add the cooked noodles (or rice), soy sauce, rice wine vinegar, oyster sauce, ginger, garlic and black pepper. Toss everything together until well combined and heated through.
Sprinkle with sesame seeds and chopped spring onion, then serve immediately.
