Veggie Fajitas (HC)
Ingredients
- 1 tsp olive oil
- 1 small onion
- 1 medium red pepper
- 5 mushrooms
- 80g courgette
- ½ teaspoon paprika
- 75g black beans, canned
- ½ teaspoon cumin seeds
- ½ teaspoon garlic powder
- 1 wholewheat tortilla wrap
- 2 tablespoons sour cream
- 80g (1 bowl) spinach leaves
Instructions:
In a frying pan add a little olive oil.
Slice the onions, peppers, mushrooms,courgettes and allow to saute for 5 minutes. Add in paprika powder, black beans, cumin and garlic (add any other mexican type seasoning).
Dry fry a wrap on a frying pan for 2 minutes on each side, check so it doesn’t burn. Take wrap, spread sour cream on it, add spinach and top with vegetables.
Can serve with any salad or vegetables.
