Tuna Melt Wrap

Ingredients

  • 1 large tortilla wrap
  • 30g cheese, grated
  • Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)

For Tuna Mayo (Serves: 2-3):

  • 2 tins of tuna, in water or brine, drained (approx. 290g)
  • 2-3 spring onions, sliced
  • 2-3 tbsp tinned sweetcorn, rinsed and drained
  • 2 tbsp full-fat Greek yoghurt
  • 1 heaped tbsp mayonnaise
  • Black pepper, to taste
  • Squeeze of lemon juice (optional)

Instructions:

For Tuna Mayo:

  1. Add the tuna, spring onions, sweetcorn, Greek yoghurt, mayonnaise, black pepper and lemon juice (if using), to a large bowl.

  2. Stir everything together until well combined.

For the Wrap:

  1. Place the tortilla on a chopping board. Add a portion of the tuna mixture to one half of the wrap and spread out in an even layer.

  2. Add the cheese, then fold the wrap over to form a semi-circle.

  3. Heat a non-stick frying pan over medium heat. Cook the wrap for 2-3 minutes on each side or until the wrap is golden and the cheese is melted.

  4. Serve with a salad of your choice.

Note: The tuna mayo recipe makes 2-3 portions. Store in the fridge and enjoy for lunch over the next 2-3 days.
