Toast, Berries + “Healthy”Chocolate Spread

Ingredients

Chocolate Spread (makes 4-6 portions):

  • ½ tin chickpeas, rinsed and drained

  • 4 tsp maple syrup (or honey)

  • 1 tbsp no-added-sugar cocao powder (or unsweetened cocoa powder)

  • 2 tbsp milk (of your choice)

To Serve (per portion):

  • 1 slice wholemeal bread

  • Handful of mixed berries, fresh or frozen, defrosted (approx.15; strawberries, raspberries, blueberries etc.)

Instructions

  1. Add the chickpeas, maple syrup, cocoa powder, and milk to a blender. Blitz until smooth, stopping to scrape down the sides a few times to ensure a creamy, even texture.

  2. Toast the bread and spread 1 tbsp of the chocolate spread on top.

  3. Add the berries and enjoy.

    Note - The chocolate spread makes 4-6 portions. Store the remainder in the fridge in an airtight container for up to 1 week.

    The chocolate spread also works well as a snack with rice cakes and berries.
