Summer Fruits Chia Pudding

Ingredients

  • 100g frozen summer fruits mix (a mix of blackberries, strawberries, redcurrants, blackcurrants and raspberries)
  • Splash of water
  • 1 tsp honey (or maple syrup)
  • 125g full-fat Greek yoghurt
  • 1 heaped tbsp chia seeds
  • 1 tsp sunflower seeds
  • 1 tsp desiccated coconut

Instructions

  1. Blitz the fruit, water and honey in a blender or food processor until smooth.

  2. Put the Greek yoghurt into a jar or container and add the fruit mixture on top and mix around until incorporated into the yoghurt.

  3. Add the chia seeds and mix around until all is combined.

  4. Close the jar/container and place it in the fridge overnight.

  5. In the morning, serve topped with the seeds and coconut.

Note - Add a little milk before serving to loosen the consistency if you prefer.
