Summer Fruits Chia Pudding

Ingredients

  • 100g frozen summer fruits mix (a mix of blackberries, strawberries, redcurrants, blackcurrants and raspberries)
  • 70ml milk (of your choice)
  • 75g full-fat Greek yoghurt
  • 1 tsp maple syrup (or honey)
  • 1 tsp chia seeds
  • 1 tsp sunflower seeds
  • 1 tsp desiccated coconut

Instructions

  1. Blitz the frozen summer fruits, milk, Greek yoghurt and maple syrup in a blender or food processor until smooth.

  2. Pour into a jar or container and add the chia seeds.

  3. Mix around until all is combined.

  4. Close the container and place it in the fridge overnight.

  5. In the morning, serve topped with the seeds and coconut.

Note - Add a little extra milk before serving to loosen the consistency if you prefer.
