Spanish Tortilla + Veggies

Ingredients

  • ¼ - ½ large Spanish tortilla (shop bought)*
  • Portion of vegetables of your choice (e.g., mixed salad, frozen veg medley, frozen peas/sweetcorn)
  • 1 tsp ketchup or mayonnaise

Instructions

  1. Cook the Spanish tortilla according to the packet instructions, or using your preferred method (oven, grill, or air fryer) until heated through and lightly golden.

  2. Prepare your vegetables by steaming, boiling, or microwaving until cooked to your liking.

  3. Serve the tortilla with the vegetables on the side and add ketchup or mayonnaise as a condiment.

Note - When choosing a shop-bought Spanish tortilla, look for options that:

  • Contain a high percentage of eggs and vegetables

  • Have more green and amber traffic light labels, with fewer reds

  • Contain shorter ingredient lists with minimal preservatives and additives
