Smashed Avocado & Egg on Toast

Ingredients

  • 1 slice of brown wholemeal bread
  • ¼ large or ½ small avocado
  • 1 boiled egg
  • A squeeze of lime juice
  • Sprinkle of black pepper, to taste
  • 3–4 cherry tomatoes, quartered
  • Sprinkle of chilli powder

Instructions

  1. Toast the bread to your liking.

  2. In a small bowl, mash the avocado together with the boiled egg until well combined.

  3. Add the lime juice and season with black pepper to taste.

  4. Spread the smashed avocado and egg mixture on the toast.

  5. Top with the cherry tomatoes and a sprinkle of chilli powder.
