Simple Rocket Salad (LC)
Ingredients
- Large handful of rocket leaves
- 100-150g salad veggies of your choice (cherry tomatoes, red onions, peppers, sweetcorn, beetroot, grated carrot)
- Your choice of protein (100g rotisserie chicken, 2 boiled eggs, 1 small tin of tuna, 2 sausages or 115g tofu)
- 30g cheese (cheddar, feta, mozzarella, Parmesan)
- 1 tbsp nuts (pistachios, walnuts, flaked almonds)
Dressing
- 1 tsp of extra virgin olive oil
- Squeeze of lemon juice
- Pinch of black pepper, to taste
- ½ tsp mixed herbs (optional)
Instructions:
Mix the dressing ingredients in a small bowl and set aside.
Place the rocket leaves into a bowl or onto a plate as your base.
Add your choice of salad veggies, chopped or sliced as needed.
Top with your chosen protein.
Sprinkle over the cheese, crumbled or grated, depending on the type.
Add the nuts for crunch and texture.
Drizzle with the dressing just before serving and toss gently if desired.
Note - You could swap the 30g of hard cheese for 70g of grilled halloumi to make it your protein source and choice of cheese.
