Simple Goats Cheese & Beetroot Salad

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • ½ tsp dijon mustard
  • 1 tsp honey
  • 1 tsp lemon juice
  • 1 bowl of rocket or any salad leaves
  • 1-2 beetroot, cooked, sliced
  • ½ red onion, finely sliced
  • 30g goat’s cheese, crumbled
  • 30g walnuts, chopped (toasted, optional)
  • Black pepper, for seasoning

Instructions

  1. Mix extra virgin olive oil, balsamic vinegar, dijon mustard, honey and lemon juice together in a small bowl until fully combined.

  2. Place rocket or leaves in a salad bowl, top with the cooked beetroot, red onion, goat’s cheese and walnuts. Season with black pepper.

  3. Drizzle with the dressing and serve with additional protein if needed.

Top tip: Add your choice of protein from the protein swap list (any meat, fish or vegetarian protein).
