Simple Goats Cheese & Beetroot Salad (LC)
Ingredients
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- ½ tsp dijon mustard
- 1 tsp honey
- 1 tsp lemon juice
- 1 bowl of rocket or any salad leaves
- 1-2 beetroot, cooked, sliced
- ½ red onion, finely sliced
- 30g goat’s cheese, crumbled
- 30g walnuts, chopped (toasted, optional)
- Black pepper, for seasoning
Instructions
Mix extra virgin olive oil, balsamic vinegar, dijon mustard, honey and lemon juice together in a small bowl until fully combined.
Place rocket or leaves in a salad bowl, top with the cooked beetroot, red onion, goat’s cheese and walnuts. Season with black pepper.
Drizzle with the dressing and serve with additional protein if needed.
