Sausage and Bean Casserole (HC)
Ingredients
- 1 tsp olive oil
- ½ onion
- ¼ stick of celery
- 4 slices of yellow pepper
- 4 slices of red pepper
- 30g chorizo
- 2 pork sausages
- ½ clove of garlic
- ½ teaspoon of smoked paprika
- ½ teaspoon of cumin seeds, whole or ground
- ½ teaspoon of thyme
- 200g tomatoes, canned
- ½ stock cube, low sodium
- 172g cannellini beans, canned
- Sprinkle black pepper
Instructions:
Heat olive oil in a pot.
Add chopped onion and cook gently for 5 minutes.
Add finely chopped celery, yellow pepper, red pepper and cook for a further 5 mins.
Add the chorizo and sausages, fry for 5 minutes.
Stir in garlic, smoked paprika, cumin and thyme then continue cooking for 1 – 2 min.
Add tinned tomatoes and bring to a simmer. Crumble in the chicken stock cube and stir.
Cook for 40 minutes. Stir in drained and rinsed cannellini beans and cook for a further five minutes.
Taste test, season with black pepper and add any additional seasoning if you need it.
Serve with salad or vegetables.
