Salmon Salad (LC)
Ingredients
- 1 small tin salmon, in brine, 80g
- 1 tsp parsley
- Black pepper
- ¼ cucumber
- ½ red peppers
- ½ red onion
- ½ avocado
- Squeeze lemon juice
- Drizzle of extra-virgin olive oil (optional)
- Small bowl of rocket
Instructions:
Drain the tinned salmon and place in a bowl.
Season with parsley and black pepper and mix well.
Chop the cucumber, pepper (bell pepper), onion and cube the avocado.
Combine everything together and mix well.
Serve on a bed of rocket with a squeeze of lemon juice and a drizzle of extra-virgin olive oil (optional).
