Salmon Salad (LC)

Ingredients

  • 1 small tin salmon, in brine, 80g
  • 1 tsp parsley
  • Black pepper
  • ¼ cucumber
  • ½ red peppers
  • ½ red onion
  • ½ avocado
  • Squeeze lemon juice
  • Drizzle of extra-virgin olive oil (optional)
  • Small bowl of rocket

Instructions:

  1. Drain the tinned salmon and place in a bowl.

  2. Season with parsley and black pepper and mix well.

  3. Chop the cucumber, pepper (bell pepper), onion and cube the avocado.

  4. Combine everything together and mix well.

  5. Serve on a bed of rocket with a squeeze of lemon juice and a drizzle of extra-virgin olive oil (optional).
